Casadiellas
Casadiellas (casadielles) are one of the most traditional and beloved sweets of the principality, essential during patron saint festivals, Carnival, and Christmas. They are shaped like a tube or fried pastry, made with a thin and crispy dough of flour, butter or lard, white wine, and a hint of anise. Inside, they hide a dense and aromatic filling made of ground walnuts (or hazelnuts, depending on the area), sugar, and a splash of liquor. After being fried in abundant oil until golden, they are generously sprinkled with sugar. Each bite offers a perfect contrast between the crispy exterior of the dough and the soft and spiced heart of the nut.
