Frixuelos

The Frixuelos

Frixuelos are the Asturian version of crêpes or filloas, a humble dessert of peasant origin particularly rooted in the celebrations of Antroxu (Carnival). Their preparation requires mastery in handling the pan: a fluid mixture of milk, eggs, flour, a pinch of salt, and a touch of lemon zest or anise is poured into a very hot pan to form extremely thin and almost transparent sheets. They are stacked on top of each other while sugar is sprinkled between each layer, causing it to melt with the residual heat. Although traditionally eaten plain or rolled with sugar, nowadays it is common to enjoy them filled with apple compote, pastry cream, or dulce de leche.
